Use a rum that’s been aged for at least five years.
Use freshly squeezed lime juice and fresh mint leaves for a vibrant cocktail.
When muddling the mint do it gently otherwise it will impart a bitter taste.
Add the mint leaves, lime juice and simple syrup to a cocktail shaker
Gently muddle then add ice
Add the rum and bitters, then close the shaker
Shake until properly chilled
Double strain into a chilled coupe glass
Top with Champagne
Garnish with a sprig of mint and lime wheel
