Follow this easy Watermelon Martini recipe to prepare the ultimate summer drink for your parties. You can also make it in a big batch and serve it with a decadent tropical fruit platter.

You can make your simple syrup at home by adding water and sugar to a small pan and heating them over medium heat until the sugar has dissolved. Let it cool and store it in a suitable container for up to 3 months.

Mealy or overripe watermelon is perfect for turning into watermelon juice, that you can use in smoothies and popsicles too.

If fresh watermelon is out of season, you can replace it with watermelon purée.

tbsp sugar, for rimming

tbsp salt, for rimming

INSTRUCTIONS

Prepare the rim for the glasses: mix sugar and salt together, then wet your glasses with a piece of watermelon and dip them in the salt and sugar mixture

Make the watermelon juice: put the watermelon chunks in a blender and blend till liquified

Add the watermelon juice, vodka, lime juice and simple syrup to a cocktail shaker with ice and shake well

Strain content into the chilled martini glasses

Garnish with watermelon wedges and serve

The history behind this vodka Watermelon Martini is uncertain, however, legend has it that the cocktail emerged in London in the 1990s and might have been created at the Met Bar. 

Watermelon itself has been a fruity addition to cocktails for many years, thanks to its high water content and sweetness.
